How To Cook Nigerian Peppered Chicken Without Frying: Healthy Nigerian Recipe & Video




What you will need

Ingredients

  • 5-6 lbs soft chicken chopped
  • 1 onion
  • 3-5 scotch bonnet peppers
  • 4 large bell peppers 
  • 1-2 tablespoon thyme
  • 1-2 tablespoons curry 
  • 1-2 tablespoon garlic powder  
  • Salt and pepper to taste


Steps

  1.  Add thawed chicken to pot and cook on medium heat. Do not add water to chicken. Water will come out of the chicken, and this allows the spices to really penetrate the meat.
  2. Add 1/2 diced onion, salt, pepper, garlic powder, thyme, and curry powder
  3. Stir chicken frequently to prevent from burning
  4. Allow to cook 10-15 mins
  5. Chop up bell peppers, set some aside to use as garnish, and to add to pepper mixture later
  6. Add 1/2 onion, and all peppers to blender and blend coarsely
  7. Remove Chicken from pot, leaving water in pot and add pepper mixture to pot
  8. Cook pepper mixture for 10-15 mins allowing water to reduce
  9. I add some fresh sliced bell peppers to pot as well
  10. Add Chicken back to pot and stir
  11. Remove chicken again and place on baking pan
  12. Bake Chicken 10-15 minutes or until golden and fully cooked through
  13. While Chicken is baking, continue to reduce pepper mixture on stove so water can dry up
  14. Once pepper mixture has reduce to a thick pepper sauce add chicken back to pepper mixture and stir
  15. Garnish with more sliced bell peppers and Enjoy
  16. You can eat peppered chicken alone, with white rice, jollof rice, fried rice, boiled yam or plantain.
