Quick And Easy Crispy Baked Plantain Chips Recipe With Video

Baking plantain instead of frying can cut loads of calories by cutting out unnecessary fat from excess oil used in frying. Plantain alone is very nutritious providing high amounts of nutrients such as potassium, magnesium fiber, Vit A, and Vit C. Consumption of unripe green plantain is actually advised for people with diabetes to help control blood sugar. But these nutritional characteristics of plantain can be negated when plantain are fried in excess oil. Also, one should keep in mind that 1 medium sized plantain has around 250 calories. So the serving consumed by one person at one time, should be no more than 2 whole plantains depending on what it is being paired with. What you will need for this Recipe

  • 2 GREEN plantain (unripe)
  • Olive oil
  • oil spray
  • Salt 
  • A baking pan
  • Aluminum foil or parchment paper

Steps

  1. Cut plantain in thin slices. The thinner the slice the more crispy chip you will get!
  2. I cut my plantain to get round little chips, but others cut them lengthwise to get long chips. For more even and uniform chips you can invest in a slicer from amazon, but I just use a knife.
  3. Place plantain in large bowl and coat with 1 tablespoons of oil. 
  4. Add a few pinches of salt
  5. Toss plantain around in bowl to evenly coat with oil and salt
  6. Preheat oven to 400 F (204 C)
  7. Foil baking pan and spray with cooking spray
  8. Once oven is preheated baked plantain 20 minutes  or so watching for golden brown color
  9. Take plantain out when golden brown and serve with eggs for breakfast, or rice and stew for lunch or dinner, or just enjoy as a snack alone or with your favorite dip.
